One Extreme Taco

I didn’t want to eat the taco de chapulines, or cricket taco, at Puerto Vallarta’s popular restaurant, El Arrayan. The roasted crickets, wrapped in homemade flour tortillas and topped with fresh herbs, salsa and guacamole, had retained their familiar body shape, wings and all, and almost looked alive on my plate. I momentarily thought to change my order from insects to chicken, but I had to try this bizarre dish. As it turned out, they weren’t bad. They were crunchy and tasted just like roasted soybeans—only with wings.
